Recipe #1 Low Fat Butter Chicken
We know your father loves the sound of this dish that is why we have brought a healthier treat which you can gift him.
- 400 gm chicken sliced / chunks4 large onions
- 2-3 cinnamon sticks
- 4 laung / cloves
- 2 tej pata / bay leaf
- 1 Tbsp garlic paste
- 2 cardamom
- 5-6 (or one tin )large red tomatoes
- Salt to taste
- 1/2 tsp red chilli or more if you want it really spicy
- 1/2 tsp coriander powder
- 1/4 tsp haldi / turmeric
- 3-4 green chillies slit from the middle and de seeded
- Fresh coriander for garnish
- 1/4 cup yogurt/curd
- 2 tsp oil
- Simply heat 2 tsp oil in a pan and add long sliced onion, cinnamon, tej pata, cardamom, garlic paste and sauté all these till golden brown.
- Once cooled, blend this mixture with tomatoes and curd to obtain a smooth paste.
- Use the leftover oil in the pan to sauté chicken. Now add the onion, tomato and curd paste with chicken along with salt to taste, red and green chillies, coriander powder, haldi.
- Cook till the oil in chicken comes out and floats on top.
- Garnish with coriander leaves before serving.
Recipe #2 Keto Mushroom Omelet
- 3 eggs
- 1 oz. butter, for frying
- 1 oz. shredded cheese
- 1⁄5 yellow onion
- 3 mushrooms
- salt and pepper
- Whisk the eggs with a pinch of salt and pepper into a mixing bowl until smooth and frothy.
- Add spices to the batter. Melt butter in a pan and add the egg mixture.
- Once the omelet begins to get firm but is still soft in the center, you can sprinkle cheese, mushrooms and onion on top.
- Using a spatula, carefully ease the edges and fold the omelet. Once golden brown, transfer to a plate.
Recipe #3 Low Fat Celery Soup
- 2 Cups Celery (diced)
- 1 Onion, chopped
- 1 Tbsp Garlic, chopped
- 1 1/2 Tbsp Ginger, chopped
- 4 Cups Chicken stock (with cubes or chicken powder)
- 1/2 Cup Milk
- Freshly ground black pepper
- Heat butter in a pan and add garlic, ginger and onion. Stir fry for 2 minutes.
- Add chopped celery and cook for 5 minutes, then add the stock.
- Reduce the heat and simmer for 10 minutes, till the celery is tender.
- Mix after adding salt and pepper. Add milk and remove from heat.
- Once cooled, puree the mix and mildly heat again, stirring it till well combined.
Recipe #4 Low Fat Pepper Chicken Dry
- 1 kg chopped chicken
- 2 tsp crushed pepper
- 1 green chilli
- 2 onions
- Curry Leaves
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- Coriander leaves
- Marinate the chicken with crushed pepper, turmeric powder and salt and keep aside for half hour.
- Add 2 tsp cooking oil in a wok and fry chopped onions till golden brown.
- Add sliced green chillies, curry leaves, and ginger-garlic paste. Stir for a minute.
- Add marinated chicken and cook for about 15 minutes.
- Serve hot with bread or rice and garnish with coriander leaves.
Recipe #5 Kanyakumari Fish Curry without Oil
- 1 whole fish (any would do – king fish, sardines etc.)
- 1 cup coconut scrapping
- 1 tsp chilli powder
- 1 tsp coriander powder
- 1/4 tsp turmeric
- 1/2 tsp pepper cones
- 2-3 shallots 2-3 (or onions)
- Few curry leaves
- 2 green chillies
- 2 tomatoes (medium size),
- 2-3 tamarind sticks
- 1 medium size lemon
- Soak Tamarind in a cup of water.
- Chop green chillies and tomatoes, peel shallots and keep everything aside.
- Prepare a paste by grinding coconut, chilli powder, coriander powder, turmeric powder, pepper cones into a paste.
- Add shallots to the paste and blend grind again to make coarse paste.
- After filtering the impurities and straining the tamarind water in a bowl, add the coconut-shallot paste, tamarind water, green chillies, tomatoes, salt.
- Bring it to boil, and add fish and curry leaves. Mix well.
- Let it simmer for about 10 minutes.
Recipe #6 Sugar Free Granula
- 2 cups of rolled oats (not ready-to-eat)
- 1 1/2 Tbsp sunflower seeds
- 1 Tbsp pumpkin seeds
- 1 Tbsp sesame seeds (safed til)
- One packet flax seeds (14 gms)
- 1/4 cup of orange juice
- 2 Tbsp olive oil
- Half a handful of strawberries/apple/fruit of choice
- 2 Tbsp of hung yoghurt
- 10 skinned almonds cut into slivers.
- After preheating the oven to 325 degrees F, mix the juice into the oats and add all other ingredients and spread them evenly on a baking tray.
- Bake for 45 minutes and keep turning the mix.
- Remove and let it cool and then add yogurt, almonds and fresh fruits.
- Optionally add a teaspoon of honey and serve.
- Avoid mixing yogurt and fruit way before serving as it will become too dry.
