Bombil / Bombay Duck fish is a delicious and healthy option. This is very popular food / fish in Mumbai and western coastal areas in India. You will find this fish in 2 forms fresh and dried. The dried bombil can be stored and made as per requirement but fresh fish must be consumed immediately. Fresh fish is mostly served as a starter or side dish. You can enjoy it as a snack or roti.

Bombay duck fish  is also a healthy food as it’s high on protein, contains the substantial level of Omega 3 polyunsaturated fatty acids, minerals and vitamins.

Here I am sharing crispy and yummy yet very easy recipe of fresh Bombay Duck / Bombil fish fry.

Ingredients
  1. ½ kg bombil / Bombay duck fish
  2. 1 ½ tea spoon Red chili powder
  3. ½ tea spoon salt
  4. 1 piece of lemon
  5. ½ tea spoon turmeric powder
  6. 1 tea spoon Ginger garlic paste
  7. 1 cup rice flour
  8. 1 cup semolina
  9. Oil for frying
Instructions
  1. Cut the mouth & tail part of fish wash it and cut into 2 pieces. Clean fish gently with fresh water as it is very soft. Take it in bowl.
  2. Add turmeric powder, chilli powder, ginger garlic paste, salt & mix it properly. Add lime juice in it & keep it aside for 40 minutes to marinate.
  3. Heat oil for frying on tawa / pan, I shallow fried the fish, if you want to deep fry it use a wide and deep frying pan or wok. The oil should be hot but not smoky. For even cooking keep gas on medium high
  4. Mix the rice flour and semolina in a plate, you can also use breadcrumbs for more crunch.
  5. Coat each piece of marinated fish in this mixture and pat gently so that it coats nicely on both sides.
  6. Add the fish on the tawa / pan, while adding make sure that stomach portion must face the oil first. Add all the pieces and keep them for 1-2 minutes.
  7. When extra moisture start to evaporate and the coating turns light brown, flip the fish slowly and cook on the other side for 2-3 minutes. Make sure each fish piece should be fried roughly for 5 to 7 minutes on both sides to get properly cooked.
  8. Carefully remove the fish using a slotted spoon, enjoy hot with roti or as a snack.

Notes
  1. Use Lemon juice while washing/cleaning a fish which will help reduce fish odor.
  2. Do not keep flipping the sides every now and then or else it will start breaking

When extra moisture start to evaporate and the coating turns light brown, flip the fish slowly and cook on the other side for 2-3 minutes. Make sure each fish piece should be fried roughly for 5 to 7 minutes on both sides to get properly cooked.

         

Carefully remove the fish using a slotted spoon, enjoy hot with roti or as a snack.
